Just Starting

Welcome to my new blog for gluten, dairy, soy and nut free recipes.
 Over the next few weeks, I will be adding new recipes and moving recipes from my other blog (which is now private and mostly family stuff). Also, I will be adding recipes that  were printed in my newsletter, "The Gluten Free Gathering".

Help? I tried making this batter, but it was so thick, I couldn't even stir it. After adding more than 2 cups of water, it was still not of a "batter" consistency. The oil measurement only read "1/4", so I assumed it was 1/4 cup? And, the xanthan gum amount read "1/4 cup". Are these accurate? Can't figure out what I did incorrectly. Any assistance would be appreciated!
